Pizza notebook – quick tip for the dough.
January 27th, 2010 · No Comments · Food
(this mainly applies to my home oven baked smaller pizzas but might be applicable to many others – and as always, this is an evolving process)
After you make your dough, let it stay in the fridge to develop flavor for 2-3 days. The 24 hour period is a minimum, but 2-3 days is optimal I [...]
Cast Iron Baked Pizza? I think not, Atlantic Monthly!
January 25th, 2010 · No Comments · Food
I don’t understand the popularity of the cast iron method of baking a pizza. If done properly, a stone will do the trick just fine. This new article on the Atlantic Monthly’s website feels otherwise. I think I need to disspell the myth that this is somehow better and actually try it. Anyone else do [...]

Weekly Round Up
January 23rd, 2010 · No Comments · Bloggish, Computery, Crosspost, Food, Local, Photography, stuff
Getting into the habit of reviewing the interesting Internetty / bloggy / foody / &tc.-y stuff from the week is something I would like to establish. It gives me a chance to reflect and review all the garbage I saw all week, determine what was actually interesting and not heat-of-the-moment cool, and hopefully I can [...]

Homemade mayonnaise – deliciously simple!
January 9th, 2010 · No Comments · Food
Using the below YouTube instructions, I was able to recreate the mayo this guy made pretty well. My only mistake was using Extra Virgin Olive Oil instead of something a little less… flavorful. Here is a pic of how mine ended up (excuse the flash – no good light in the kitchen…)

Daily Photo Jan. 6 – a day late

Yep, I’m already late! I have just been floored busy this week and have had no time. I will make time this evening to get at least some sort of daily photo up. The below pic was taken of one of the best pizzas I have ever made. I’m very happy with the way my [...]
Quick post re: tea
January 2nd, 2010 · No Comments · Food
Gwen is sick with a cold right now, so I made tea today. I also wanted to try Earl Grey for the first time, and we had a tin of it (unknown origin) in the cupboard among the 10,000 other random teas in there. I liked it, though it tasted a bit too lavender-y. I [...]

Alton Brown on knife skills – a quick intro
December 29th, 2009 · No Comments · Food
Alton Brown’s ‘Good Eats’ has been around for a while, and sometimes I find an episode on YouTube that could really help the beginner / seasoned home cook. This particular is a quick intro to knife skills and has some very basic info about knives, and shows quickly how to prep some veggies.
Part 1:
Part [...]

Quick video teaching how to stretch pizza dough / toss pizza dough.
December 22nd, 2009 · No Comments · Food
This video is from a cooking school – showing the students how to properly stretch the Sourdough pizza dough, then how to toss properly. I will try it out at home tonight and report back on my success or failure. The part I took away from this video was to press down and make an [...]

Tonight’s breadfail.
November 30th, 2009 · No Comments · Food
So I was experimenting with a small loaf of white bread with a recipe I’d found online. It was posted over to The Fresh Loaf here: http://www.thefreshloaf.com/recipes/mydailybread. The recipe was mostly vague, and I really was just messing around. It is a poolish bread, and I had left the poolish on the top of [...]
