This is one of my favorite meals. It’s perfect for a summer afternoon, and requires very little thought or work. I love chicken wings, but can’t get them perfect in the fryer at home, and grilling them is the best way I make them.
First, buy whole wings. Not ‘party wings’ that are already cut apart. I use about six per meal. I throw them in a plastic grocery bag with a bit of Badia brand Cajun seasoning. None of the other brands seem to have the right blend of ingreedients for me. It can be found in the Mexican section of Shaws or any other grocery store. Only a light sprinkiling and mixing around in the bag is necessary.

Next, light the grill. I have a cheap propane grill with three tiers. (By cheap I mean free on the Craigslist. LOVES the free section of the Craigslist.) Keep the grill on high for fifteen minutes to warm it up.

Next, husk your corn and set it on some tin foil. Put some butter and salt on it then wrap it in the tin foil.

Place the wings flat on the middle rack of the grill, and turn the burners to low. Close the grill and leave for 15 minutes.
After 15 minutes, flip the wings, and add the corn to the top rack.

Another 15 minutes later, flip the corn around and turn the grill back up to high. Move the wings down to the bottom rack and give them a good char to the skins, watching out not to blacken the tips. Takes about five minutes, flipping once in the middle.
The trick is to cook them inside before making the outside nice and crisp but not burnt. Also, this is the best way to make them without drying them out.
Take it all off the grill, and throw the wings in a bowl with some Frank’s Red Hot sauce. Not too much as you don’t want to drown the wings. Slosh them around in the bowl for a few then move the wings to a plate so they do not get overly saturated in the sauce.

Unwrap your corn, add a tiny more butter and salt to taste. Eat, enjoy, and don’t forget to drink some Labatt Blue with it.

Sit down with a few napkins, a knife to cut apart the chicken, and enjoy! I would have posted pics of the final product but I was too hungry and ate it all.
